WARNING - I WOULDNT EAT THIS IF YOU GET SUGAR HIGHS
I dont want to take a slice because this is no doubt the best looking cake on the planet.
HOW TO MAKE THIS BEAUTIFUL CREATURE OF A CAKE.
SPONGE INGREDIENTS: 225g self raising flour, 225g sugar, 4 great big eggs, 2 tsp of baking powder, 225g margerine.
DECORATING INGREDIENTS: Strawberry Jam, Double Cream, a few tablespoons of sugar, Strawberrys, Blueberrys, Icing sugar for a sprinkle.
1. Preheat the oven - 180C
2. Throw all the sponge ingredients in a bowl and whisk whisk whisk until they are all combined and dancing.
3. Butter and line with baking parchment two cake tins - of the same size.
4. Divide the sponge mix between the two tins and put them in the oven for 30 minutes.
5. Remove from the oven when they look like gold. I stuck a knife in the center of them both to check no cake mix wasnt cooked.
6. Leave to cool.
7. Prepare the strawberrys and blueberrys. In a clean bowl whisk the double cream with a bit of caster sugar to sweeten. Whisk it until it is whipped up nicely, dont over whisk cause then it goes glumpy.
8. When the cakes have cooled. Take the prettiest one and cover the top with the whipped cream, then decorate with strawberrys and blueberrys. Turn the ugly cake over and put a layer of jam on its bottom. Then a layer of whipped cream, then a few strawberrys and blueberrys, then another layer of whipped cream. Finally lift the pretty cake on top of the ugly cake and gently push down using the whipped cream as glue.
9. Finally, sprinkle with icing sugar for extra mmm mmm mmmmmmmmmm.
